My boss needs me to create/find an object which converts compression force into rotational torque.

The object needs to be cylinder shape with max 1.5 cm height and 5 cm diameter. The max compress distance is 0.5cm.

Does anything like that in market?

A pinion gear meets that criteria. Combined with a rack.

You could use a SKF BALL SCREW http://www.skf.com/portal/skf_us/home/news?contentId=510217. in a mechanism. in all cases you need pieces to be made on purpose ,

How high is the torque? precision efficiency is grease allowed in the vicinity and so on ? . You should ask a mechanical engineer with a lot of details.
