This is a vague request... I think a good source of information / training is the LabVIEW Development Best Practices group on NI community, you'll find lost of white papers, tutorials, guides, discussions, etc...

What functionality in LVOOP do you need that you can't get with regular LV?  Answer to this question will probably help you know where to start.  

Personally I'd just recommend finding a low consequence project and just write it with classes.  

Tip:  LVOOP is basically vanilla LabVIEW but cluster TypeDefs also have methods. 

There is A LOT of depth with LVOOP but you don't need to know all that to start.  Just follow good programming practices and you'll figure it out.
